Ingredients
For Cake:
1 ¾ cups (220g) all-purpose flour
1 ½ cups (300g) granulated sugar
¾ cup (65g) unsweetened cocoa powder
1 ½ teaspoons baking powder
1 ½ teaspoons baking soda
1 teaspoon salt
2 large eggs, room temperature
1 cup (240ml) whole milk
½ cup (120ml) vegetable oil or melted butter
2 teaspoons of vanilla extract
1 cup, 240ml, boiling water, or hot coffee for a stronger flavour
For the Frosting:
1 cup, 230g, unsalted butter, soft
3 ½ cups, 440g, powdered sugar
½ cup, 40g, unsweetened cocoa powder
½ teaspoon of salt
2 teaspoons of vanilla extract
¼ cup, 60ml, heavy cream or milk, until desired consistency reached
Instructions:
For the Cake:
1. Preheat Oven: The oven preheats to a temperature of 350°F or 175°C. Lightly grease and flour two 9-inch round cake pans or line with parchment paper.
2. Mix Dry Ingredients: Flour, sugar, cocoa powder, baking powder, baking soda, salt mix in a large bowl until well combined.
3. Add Wet Ingredients: Add the eggs, milk, oil, and vanilla to the dry mixture. Beat on medium until smooth, about 2 minutes.
4. Add Boiling Water: Slowly stir in boiling water-or hot coffee-until batter is well combined. Batter will be thin-this is normal.
5. Bake: Divide batter evenly between the prepared pans. Bake 30-35 minutes or until a toothpick inserted into the center comes out clean.
6. Cool: Let the cakes cool in the pans for 10 minutes then transfer them to a wire rack to cool completely.
For the Frosting:
1. Beat Butter: Beat the softened butter at medium speed until creamy, about 1-2 minutes.
2. Add Dry Ingredients: Gradually add the powdered sugar, cocoa powder, and salt. Beat on low until combined.
3. Add Vanilla & Cream: Beat in the vanilla extract and heavy cream. Beat on high for 2-3 minutes, until light and fluffy. If too thick, add a little more cream. If too thin, add more powdered sugar.
Assemble the Cake:
1. Frost: When the cakes are completely cool, place one layer in a serving plate. Spread frosting on top. Place the second layer of cake on top and frost the whole cake.
2. Decorate: Any other decorations you want-add chocolate shavings or sprinkles.
3. Serve: Slice and enjoy your homemade chocolate cake!!
